Real Class-III will have waves coming over the top of the boat and you'll want the interior of the boat to be well-filled by float bags, and maybe even have a cover too. "Class III" as described in most canoe-touring pamphlets and their online equivalents is normally just moderate waves or occasional pronounced drops with quieter water below.
