I always like to see not-so-common canoe models rescued from a life of neglect. You might be able to use a router or shaper to put a nice contour on those gunwales, though imagine trying to do that in any manner that's a bit improvisational might be risky, as far as causing damage. Careful work with a belt sander would do in a pinch though, especially if you make yourself a template out of stiff paper with which to judge your progress.
