My wife made this pumpkin cake recipe at home and we brought it along for lunch on one of our last paddles of the season. It tastes great and provides paddling energy! The same cake was sitting on the kitchen counter a couple of days later, and it still tasted great. I wouldn't try to bake it on an expedition, but I'd certainly carry it onboard. I think Ann Desjardins gives us a lot of recipes we can make while camping, but others should be prepared beforehand at home.
