I find I over buy mushrooms or bunch of cilantro or parsley on sale and then they go to mush in the fridge. Now I remove stems [save them] put the caps or leaves in a plain brown paper bag (remember good things come in brown paper wrappers? ;))!). Do the same for the stems. Now put both in the fridge leaving the top of the bag open and shake them up every other day. Depending on dryness and temperature of your fridge in 2-4 weeks time they will have "freeze dried". Do the same with the stems tho it may take longer, but when crunch dry pulverize them in a coffee grinder for what amounts to instant flavor added to any soup, etc. I clean my coffee grinder first with a tsp. of rice ground to a powder and then a brush. Or if you get serious devote a 2nd grinder to herbs and spices. Nothing like the smell of fresh ground cumin, allspice, etc. Enjoy,
