Question about drying above 105 degrees

Overall, this was a great article! My only question is about heating raw foods over 105 degrees - doesn't that destroy their vitamins and enzymes?
Living in AZ, sun drying is more of an otion than elsewhere, but for drying any raw foods, i think i'd allow the time extension needed to keep the temp below 105...
(And after visiting Dr Matthias Rath's website, i would also take vitamins and a good digestive enzyme complex on the trip) Many Blessings! wc
