Fresh unfertilized eggs have traveled on boats with me for as long as I can remember.
They should be dipped in mineral oil and allowed to dry. Repeat this twice and then you can store them in a dark dry place for up to 6 months. I never had enough to last over 4 months, but they tasted better than the ones you buy "fresh" from the grocery store. If in doubt, dropping an egg in water before you cook it is an easy test. If the egg floats, don't eat it! That's the whole egg, unbroken shell! Fried,poached, scrambled, or hard boiled, a tasty switch from packaged dry meals! The plastic containers (3X4) are great and can fit almost anywhere in a kayak or in the bilge of a sailboat.
