I purchased two Pelican Colorados for a local youth camp. I have owned and paddled many canoes over the past 20 years and find the Colorado to be an excellent bang for the buck. It’s a great still-water canoe; an okay whitewater boat for class I/II rapids so long as the water is deep... keels and rocks don’t mix.

As far as stability goes I would remind anyone that, "...it’s a canoe, they’re inherently unstable." If you’re looking for stable I would suggest a pontoon boat.
